Decent Wines snags Smallgoods Smackdown

Decent Wines Capacollo from Yarra Valley has been named Best in Show at the 2025 Wine Industry Smallgoods Smackdown (WISS).

Barossa winemaker David Franz had a good show, winning Best Wurst and Best General Smallgoods.

Judges included Dave Brooks and Max Allen. All judges have been accounted for.

Best Wurst
Mt Lehmo Mettwurst.

Entrant’s comments: “Mt Lehmo Mettwurst – 52 percent 32 Degrees South Chuck Tender, 48 percent Gumshire Heritage Hampghire Pork Leg. Minced a little coarser, made a little leaner for that proper Metty Chew. Stuffed into a Dehydrated Natural Bung Casing, then Warm/Hot Smoke fermented for 48 hours with Fortified Oak Barrel Shaving (thanks Andrew Stiller) before vac sealing and smashing down, preferentially with a mad hangover on a tasty cheese and Vegemite toasty with Apex Brown Thick Cut Bread.”

Il Cattivo Pancetta – Port Elliot.

Entrant’s comments: “External of Pancetta basted with Il Cativo Montepulciano, roasted capsicum paste, salt, pepper, hot chilli powder.”
Judges’ comments: “Rooley f**king noice.”

Best Other
Utzinger Wines – The Belly Rules The Mind Smoked Pancetta, Tasmania.
Entrant’s comments: “Pancetta tesa affumicata, cured and cold smoked pancetta from a free range Berkshire pig (from the great folks at Fork it farm).”
Judges’ comments: “Judged as ‘other’ dur to its level of smoky saturation, shifting it into a speck and smoky bacon register. Transported to a shepherd’s hut halfway up a Swiss mountain, chowing down on this smoky beauty.”

Best General Smallgoods
Mt Lehmo Duck and Pork Rillette.
Entered by David Franz – Barossa Valley.
Entrant’s comments: “Mt Lehmo Duck and Pork Rillette is a classical French style rillette combining Edwards Farm Cockatoo Valley Peking Duck with Gumshire Heritage Breed Hampshire Pork Shoulder. Slow Braised meat is then gently removed from the bone, shredded and combined with the rest of the ingredients before being second cooked in the jar for 12 hours at 85 degrees. Perfect on a crunchy round of Apex Salt Stick with a pickle and a big slug of Barossa Grenache.”
